Root Vegetable Hash

Smoked pork or Ham Prep Time: 15 Min. Cook Time: 20 Min. What you need:

+ 3 Tbsp. olive oil
+ 1 yam, peeled and 1/2" diced + 1/2 sweet potato, peeled and 1/2" diced + 2 parsnips, peeled and 1/2"diced + 1 1/3 c. red onions, 1/2" diced + 1 c. green bell peppers, 1/2" diced + 1 c. olives, wedged + 1 tsp. salt + 1 tsp. thyme, chopped + dash cinnamon + dash cayenne pepper What to do:
1. Heat oil in a large sauté pan over medium-high heat. Add yams, sweet potatoes and parsnips and cook, stirring occasionally, until lightly browned for 8-9 minutes.
2. Add onions and peppers and continue cooking for 7-8 minutes until vegetables are completely tender. 3. Turn heat to low and season with olives, salt, thyme, cinnamon and cayenne. Serve hot. *Serving suggestion: Serve with smoked pork or ham. Nutritional information:
