Mediterranean Vegetable Pasta

Prep Time: 10 Min. Cook Time: 15 Min. What you need:

+ 3 oz. uncooked angel hair pasta
+ 1 c. chopped zucchini + 1/2 c. chopped fresh mushrooms + 1/3 c. chopped green pepper + 1/4 c. chopped onion + 1 clove minced garlic + 2 tsp. olive oil + 1 c. Italian-style diced tomatoes + 6 pitted ripe olives, halved + 1/8 tsp. pepper + 1/4 c. crumbled reduced-fat feta cheese + 1 Tbsp. Parmesan cheese, shredded What to do:
1. Cook pasta according to pkg. directions.
2. Meanwhile, in a large skillet, sauté the zucchini, mushrooms, green pepper, onion and garlic in oil until vegetables are crisp-tender. Stir in the tomatoes, olives and pepper; heat through. 3. Drain pasta; divide between two plates. Top with vegetable mixture and cheeses. Wine pairings:

substitute artichoke hearts for green pepper and sundried tomatoes intead of canned tomatoes
