Mexican Pork with Vegetable Rice

What you need:

+ 2 c. Minute® Brown Rice, uncooked
+ 1 c. frozen corn
+ 1 envelope taco seasoning mix, divided
+ 1 Tbsp. fresh cilantro, finely chopped
+ 1 lb. pork tenderloin, cut into strips
+ 2 tsp. oil
+ 1 c. red bell pepper, strips
+ 1 c. zucchini strips
+ 1 c. onion wedges
+ 1 c. water
What to do:
1. Cook rice as directed on pkg., adding corn and 1 Tbsp. of the taco seasoning mix to cooking water along with rice. Stir in cilantro.
2. Meanwhile, cook pork in hot oil in large nonstick skillet on medium high heat 2 to 3 min. or until pork is browned. Add remaining taco seasoning mix, red bell peppers, zucchini, onions and water. Cook on medium high heat 5 min. or until vegetables are crisp-tender, stirring occasionally.
3. Serve pork mixture over rice mixture.
